When this all started about 4 years ago, I already knew Kelli and one other girl who I had invited that night. From that first Dinner Club I met several other girls that have come to be very dear friends. We've also had a few other girls join us along the way and it's so great to nuture these friendships over food and sometimes crazy conversation! When we started many of us didn't have children or only one at the time, now we all have kids and several are expecting their 2nd or 3rd babies! This is truly an amazing group of friends. I am very sad that one of our girls is soon going to be leaving. Her husband got a great job in Indiana and while I'm thrilled for them and this opportunity. I am sad that they are leaving town. It just won't be the same without you Amanda!
One of the fun things about DC is all the great recipes I come home with. One of the "rules" is that you are supposed to bring along several copies of your recipe so that you can share it with the other girls. We also do a sign-up sheet via Facebook so that we can choose if we want to bring a maindish, sidedish or a dessert. We do a potluck style dinner and it's always fun to see what mix of food we'll have. It never all goes together, but that's kinda the fun thing about it. We get to try all kinds of new things this way!
I thought I would share with you a recipe I got from a Dinner Club girl a while ago.
Mashed Potato Cups
6 cups hot mashed potatoes
1/2 c. milk
1/4 butter
1 tsp salt
1/4 tsp pepper
1 1/3 c. cheddar cheese
parsley, dried or fresh
In large bowl combine potatoes,milk, butter, and s&p. Stir in half the cheese. Grease muffin pans. Spoon potato mixture into muffin tins and top with remaining cheese and fresh parsley. (if using dried mix in with potatoes). Bake at 350 for 15-20 minutes till cheese is melted.
I made this tonight with dinner and I didn't really follow this very closely. There's so much room for play with recipe you really can't mess it up. I made the potatoes (not sure how many cups I had, I didn't measure) and mashed them like I always do. I added a couple Tbs of butter, some milk and a little sour cream. I also added some dried parsley and salt and pepper. Then I scooped it into the muffin tin and topped it with cheddar cheese. Then I baked them at the time listed for about 15 minutes.
I really like these. It's basically mashed potatoes but it's got a bit of a twiced baked thing going on too. I think kids would love these cause they're in muffin tins and that's kinda fun and different.

Thanks again Kristin for hosting our last dinner club. I love love love dinner club and am grateful to be a part of it and to have made new friends that I plan to have for a long time!
